Cut cherries into halves then place on cooking sheet
Sprinkle with sugar then roast at 400℉ for 10 minutes
Mix brownie batter then stir in roasted cherries and ½ oz of mezcal to mix
Bake brownies and let cool
In tempered cocktail glass or mug, add 1 oz mezcal then top with coffee
Serve cocktail hot with brownie slice on side

Notes
If using frozen cherries, be sure to thaw before roasting. Chelsea originally tested with one cup of cherries in the brownie mix. She likes cherries and would recommend increasing the amount if you want more cherries per brownie slice.
