Today, we are calling upon a spirit from Proximo Spirits in Jersey City, New Jersey. We are using their The Sexton Single Malt Whiskey to summon the Stroke of Midnight.

Chelsea’s Tasting Notes

The Sexton Single Malt Shot
  • It’s nice!
  • I am tasting all the flavor notes mentioned.
  • It’s beautiful
  • It grows on your tongue
  • Perfect to enjoy on the rocks
  • So good with corned beef and cabbage!
Stroke of Midnight Cocktail
  • Curious to try this cocktail with different types of citrus bitters
  • Excited to try because it smells divine
  • I love it!
  • What if, instead of topping with champagne, you topped with an Irish meade?
  • We used a nicer bottle of champagne for this cocktail, which we don’t usually recommend, but it was delightful.

The Sexton Single Malt Shot
  • Yep! That’s Irish.
  • It’s not peaty, though.
  • Has the Irish burn
  • This is delicious
  • Really want to try making this into an Old Fashioned cocktail
Stroke of Midnight Cocktail
  • First sip wasn’t too exciting, but the second sip presented a very refreshing drink
  • Would be a perfect drink for new years
  • Maybe trying a different drier champagne versus the spumante we used.
  • We used two different types of honey in a flavor experiment and they did taste very different.
